German rucksacks and tornister packs are my "specialist subject". Don't use dubbin. What you need if Ko-Cho-Line (get it from any good saddlery supplier). Smells a bit evil, and it has the consistency of axle grease, but its absolutely superb for bringing dried out leather back to condition.
Regarding the pack, its not quite a "plain WWII German Infantry Rucksack". Take a pic of the back of the ruck and the bottom of it as well, and i'll be able to tell you a lot more about it - oh, and does it have an internal pocket in it as well?

Well, that ruck is an oddity to say the least. Colour & quality wise, the cloth appears to be German WW2. It has the right number of leather patches on the top flap, and same goes for the patches on the side as well. Stitching looks typically German as well.
What's strange is the strap setup. German rucks of that size normally came with one of two different systems. Some had a full set of straps (so they could be worn on their own, and support a belt at the same time) and the others just came with D hooks at the bottom and top to attach to the standard German Army/SS yoke.
That's not to say that you wont see a German ruck with a simple set of shoulder straps - hell, i've got a couple here - but the way they're attached to the bottom of the rucksack is a new one on me!

maybe its an after war conversion job. my dad had a brit small pack that had straps sewn on . he used it for work for years.

It's not an unusual set up, my little arty rucksack has the same. It makes it easier to unship the sack quickly.
Nothing to stop this being a post war civvy rucksack or a post war upgrade to a military sack. It could even be private purchase??
It's nice and looks the part, I'd enjoy it as it is.
